Description
The project is developing a functional beverage with antioxidant fruits and ginger in therapeutic doses, evaluating its effect in a clinical trial on inflammation, oxidative stress, and endothelial damage in overweight or obese individuals. It aims to prevent disease using plant-based bioactive compounds.
Contextual description
Low-grade chronic inflammation, oxidative stress, and endothelial damage are central pathophysiological processes in the development of many chronic diseases, especially those of cardiovascular and metabolic origin. Identifying nutritional strategies capable of modulating these mechanisms is essential for the prevention and early management of these conditions.
Results
Development of a functional ginger beverage, validated through phytochemical characterization and in vitro antioxidant assays. Clinical trial in obese adults completed, with evidence of beneficial effects on markers of inflammation, oxidative stress, and endothelial damage.
