Description
The project applies online sensors and artificial intelligence algorithms in the cheese industry to automate coagulation and syneresis processes, improving quality, efficiency and profitability by predicting cutting time and yield of fresh cheese.
Results
The non-contact Raman laser sensor was unsuitable for industrial application due to its low repeatability. Development and validation of a new rapid monitoring system for the cheesemaking process using a D440 NIR sensor. Implementation in a relevant industrial environment. Indirect contribution to food safety.
