Description
The project addresses the need to apply innovative preservation technologies that allow the inactivation of microorganisms and enzymes, while preserving the nutritional and organoleptic properties of the product through a preservation treatment that allows a minimum stability of 6 months of storage at room temperature of cloudy juices without heat treatments.
Results
The conditions for a non-thermal ultrasound treatment have been defined that achieves a 99% reduction in the activity of the Pectin Methyl Esterase (PME) enzyme in orange juice, preventing pulp settling during juice storage and without organoleptic changes.
