Description
The project investigates the extraction of bioactive compounds from pomegranate and mushroom byproducts using liquid vinegar, cyclodextrins, and ultrasound. The extracts are encapsulated for use as nutraceuticals in dressings, leveraging green technologies and compounds beneficial to health.
Results
The antimicrobial and antioxidant properties of this encapsulation have been demonstrated, achieving good preservation of the salad dressed with these encapsulated bioactive compounds.
