Description
The project aims to develop sustainable bioplastics from algae, reusing this biomass to obtain hydrocolloids and manufacture edible films. Their effectiveness in food preservation, industrial viability, and acceptance by the agri-food sector and consumers will be evaluated.
Results
Sustainable and economical method for extracting hydrocolloids from green algae using citric acid (documented internal know-how). New edible films of Caulerpa prolifera and Ulva intestinalis with optimal application properties that increase the industrial viability of fresh foods, providing greater viability in meat and fish. Caulerpa prolifera films with a greater protective and antimicrobial effect in fresh foods (utility model evaluation after pilot validation). Perception of stakeholders in the agri-food sector and consumers.
