Description
The project aims to produce plant biomass and bioactive compounds using in vitro cell cultures to develop sustainable functional foods. It optimizes plant growth in bioreactors and generates new, high-value-added ingredients, addressing global food and environmental challenges.
Contextual description
The project's biggest challenge is to meet the growing demand for food in a world with increasingly limited resources, by focusing on sustainable biotechnological alternatives that minimize environmental impact and ensure safe, balanced, and environmentally friendly food.
Results
Production of cellular biomass as a basis for new functional foods (food spheres) with high bioactive content. Introduction of antioxidant extracts from grapevine cellular biomass into guacamole to increase its bioactivity and extend the food's shelf life.
