Description
An experiment will be conducted, in a controlled and small-scale environment, to validate that by-products of mature cheese can be transformed into an attractive and nutritious snack using REV technology.
Contextual description
Waste in the cheese industry represents significant economic losses and poses a circularity challenge. The aim is to bring new products to market from these waste materials, thereby adding value to this waste and generating new business opportunities.
Results
3 snack prototypes obtained from bar scraps, semi-cured and cured cheese rinds and a mixture of both, very crispy, easy to eat and made from a single ingredient: 100% cheese.
