Characterization of honey quality through quantitative and qualitative studies, and development of screening methodologies for the detection of fraud in honey.
Contextual description
The beekeeping sector faces the challenge of guaranteeing the quality, authenticity, and traceability of honey in a context of growing demand and strong international competition, marked by the influx of low-cost imported products that, in many cases, do not comply with European regulations. The lack of transparency in labeling and the risk of fraud jeopardize consumer confidence and the viability of a sector that is strategic for the rural economy, food sovereignty, and the conservation of biodiversity through pollination.
Results
The study demonstrates the potential of NIR spectroscopy for rapid honey quality control, with effective models for predicting physicochemical parameters, hydroxymethylfurfural levels, and identifying adulterations. These models were obtained using both high-performance instruments (LabSpec 5000) and low-cost, portable equipment (MICRONIR W-OnSite).
