Description
Design and development of a pre-industrial prototype based on a novel concept for applying UV light treatments to liquid products to achieve stability and microbiological safety while maintaining their organoleptic characteristics to the maximum.
Contextual description
The food industry has shown increasing interest in using different technologies for food preservation as alternatives to heat treatments. The challenge of the GSSUV Project is the design and development of a pre-industrial prototype based on a novel concept for applying UV light treatments to liquid products, to achieve stability and microbiological safety while preserving their organoleptic characteristics to the greatest extent possible.
Results
Design and specifications for the construction of a pre-industrial scale UV prototype for pasteurizing liquid foods. Validation of the optimal treatment conditions for different matrices.
