Description
Rheological characterization is key in foods such as sauces, but rheometers are slow and not very applicable in industrial settings. This project evaluates bioimpedance and high-frequency ultrasound as fast and non-invasive alternatives to improve online quality control.
Results
Ultrasonic system for locating foreign bodies in hamburgers, packaged gelatin, and chicken; Ultrasonic technique for estimating intramuscular fat content in meat; System and procedure for monitoring the degree of ripeness of cheese; Procedure for estimating the composition and texture of lasagna sheets and gelatins.
