Description
To develop an objective and robust tool for classifying foods adapted to oropharyngeal dysphagia, based on instrumental parameters and validated with real products, that facilitates its clinical and industrial application
Contextual description
EHCALIDO will serve as a basis for the classification and development of new healthy and sustainable foods aimed at people with oropharyngeal dysphagia, thus providing the food industry with a practical and easy-to-use tool, as well as establishing the basis for the formulation and processing of new healthy and sustainable dishes.
Results
Predictive models with up to 80% accuracy in classifying foods for dysphagia. Validated with over 100 samples through sensory and instrumental analysis. Development of textured dishes as use cases, with good sensory acceptance and extended shelf life.
