SENSIWINE works on the development of intelligent and predictive sensors for parameters related to the production of aromas, acids and alcohols or the metabolic state of yeasts
Contextual description
Wine production is a complex process, and the quality of the final product depends on the characteristics of the must, the selected yeast, and the processing conditions. Winemakers must make difficult decisions, further complicated by the inability to monitor certain quality parameters, such as the aromatic profile. The technologies needed to quantify aromas and the expertise required to use them are too expensive to be incorporated into the daily practice of wineries, which rely solely on tastings. Moreover, these technologies are often slow, hindering rapid decision-making. Addressing these challenges requires a significant technological effort to optimize production from a multi-objective perspective. SENSIWINE's innovative methodology combines low-cost hardware sensors commonly used in wineries with predictive models of yeast metabolism during must fermentation of grape varieties used in wineries in the Valencian Community.
Results
Predictive sensors based on biotechnology and artificial intelligence have been developed to monitor wine fermentation in real time, anticipate deviations, optimize quality and energy efficiency, and offer accessible tools for wineries, promoting a more sustainable and predictable wine.
