Description
The project aims to add value to broccoli byproducts, utilizing stems and leaves rich in functional compounds. A fresh food product will be developed from the stem, and a fermented beverage from the leaves, optimizing production through sustainable and green technologies.
Results
New fourth range product with broccoli stems transformed into sticks, packaged in modified atmosphere and stored at 5 ± 1 °C for 11 days. New food product: corn tortillas fortified with up to 10% broccoli by-product powder (dehydrated leaves and stems) with a nutritional and technological improvement.
