Creation of an Operational Group (made up of three companies in the sector and with the technical support of two research agents specialized in the production and improvement of olive oils in Catalonia), for the drafting of a pilot project that includes the detection of the main factors that influence the final polyphenol content in the oil obtained, taking into account the handling that the olives have undergone in the field, during the harvest, in their treatment at the oil mill and in the storage conditions in which the obtained oil has been kept.
The goal of this project is to increase the level of polyphenols in EVOO and thus better utilize this health vector as an added value to olive oil production.
Additionally, the project also considers recognizing the limit of consumer acceptability of polyphenol-rich oils, given their characteristic bitterness and spiciness.
- Create an Operational Group made up of the companies SIMBIONATUR SL, COOPERATIVA L'OLIVERA SCCL and AGROINDUSTRIAL CATALANA SCCL, with the support of the Catalan Oil Cluster Association.
- To understand the agronomic and processing factors that increase the concentration of phenolic components included in the legislation to create a new range of phenol-rich oils, developing olive processing and oil mill management methods tailored to the needs of producing companies.
The ultimate goal is to increase the level of polyphenols in EVOO and thus better utilize the "health" factor as an added value to olive oil production.
