Description

Creation of an Operational Group (made up of three companies in the sector and with the technical support of two research agents specialised in the production and improvement of olive oils in Catalonia), for the drafting of a pilot project that includes the detection of the main factors that influence the final content of polyphenols in the oil obtained, taking into account the handling that the olives have undergone in the field, during the harvest, in their treatment in the oil mill and in the conservation conditions in which the oil obtained has been kept.

Objectives

The aim of this project is to increase the level of polyphenols in EVOO and thus be able to better exploit the health vector as added value to olive oil production. Additionally, the project also aims to recognise the limit of acceptability for consumers of oils rich in polyphenols, given the sensation of bitterness and spiciness that characterises them.
