Description
The project develops and validates rapid, sensitive, and cost-effective methods for detecting food contaminants and fraud. It uses techniques such as PCR and immunochemical assays to identify antibiotic residues, animal and plant species, and allergens in food, thereby improving food safety.
Results
Greater sensitivity in meat mixtures (1%, unprocessed) than in processed meats (>5%). Ability to identify 3% mandarin orange in oranges. LFIA for rapid, on-site detection of antibiotics in honey. Presence in commercial honey. High content of unauthorized doping substances in commercial supplements (30 BCAAs-83%; 31 Multivitamins-93.5%; 22 Creatines-90.9%).
