Description
Formula development, pilot plant scale manufacturing process and product data sheet for a prototype Jellys (cocktail encapsulated in gelatin), which allows extending its shelf life by stabilizing its physicochemical and organoleptic characteristics at room temperature and under refrigeration conditions
Results
Extended shelf life from 5 days to 4 months. Sensory validation with 100 consumers showed no perceptible differences compared to the original product. Process adapted to guarantee stability and quality throughout the entire shelf life.
