Description
Using its precision CO2 fermentation technology, this project has focused on optimizing the fermentation process with food-grade yeasts to obtain high-value proteins. The project aims to adapt this technological asset to the industrial environment, offering a sustainable and scalable alternative that transforms waste into a resource and opens new avenues for the production of protein ingredients.
Results
Adapted strain of yeast with regulatory approval for food use, capable of converting acetic acid into biomass that generates a high-protein extract (62-63%). Fermentation process that transforms 10 g/l/h of acetic acid as the sole carbon source into 3.3 g/l/h of biomass. Purification process that uses a single reagent, suitable for food use, and produces 32-35% by weight of protein extract relative to the biomass. Techno-economic study and calculation of production costs that confirm the industrialization potential for the CO2toProtein technology. Product knowledge and its valorization from a dietary and nutritional point of view through the determination of the essential amino acid profile and protein digestibility.
