The olive sector generates large quantities of leaves as a by-product and its management has always consisted of crushing and burning them, which is not favourable for the environment.
The olive sector generates large quantities of leaves as a byproduct, and their management has always consisted of crushing and burning them, which is not beneficial to the environment.
The project involves the optimization of the extraction process of bioactive compounds present in the olive leaf and analysis of the extracts, the manufacture of a transportable pilot plant that has the ability to be installed in rural areas, the obtaining of a high added value product with different applications in the market, the adequate conservation of the solvent and its stability over time for its application in the extraction process and the demonstration that the application to different food matrices (PETFOOD and humans) improves their properties.
Obtaining the value-added product at laboratory scale. Process optimization. Construction, assembly, and commissioning of the pilot plant for extracting bioactive compounds. Demonstration of the viability of the extraction process in a pilot plant. Market research. Feasibility of applying the product in food matrices.
Utilization of the olive leaf byproduct for the extraction of high-value bioactive compounds through the application of green solvents.
Laboratory-scale optimization of the process for obtaining bioactive compounds. Construction of a modular and transportable pilot plant for extracting bioactive compounds. Demonstration of the viability of the extract production process in a pilot plant. Market study and feasibility study for the product's application in food matrices.

The expected market impacts are as follows:
- New ingredients of plant origin for human and animal feed.
- Improved market activity, including the recovery of olive leaf waste.
Obtaining these ingredients will involve, compared to the current market offering:
- High-quality food ingredients with suitable functional properties.
- A new market for developed ingredients.
- Positive environmental impact thanks to the recovery of byproducts from olive processing.
- Greater environmental and economic sustainability and competitiveness of the industry through higher-quality products and reduced waste loss.
