Cold plasma is emerging as a promising non-thermal technology capable of inactivating a wide range of microorganisms without affecting the product. The challenge lies in optimizing its application conditions and validating its effectiveness in real food matrices.
Contextual description
Fresh and minimally processed foods are highly perishable and sensitive to conventional preservation technologies, which often deteriorate their organoleptic properties, thus requiring the exploration of innovative alternatives. Cold plasma emerges as a promising non-thermal technology, capable of inactivating a wide range of microorganisms without affecting the product. The challenge lies in optimizing its application conditions and validating its effectiveness in real food matrices.
Results
- Extrapolation of the operation of an industrial cold plasma system dedicated to cosmetics/pharmaceuticals and medicine to packaged foods. - Determination of the optimal O2/N2/CO2 gas composition to achieve sanitizing efficacy against the main spoilage agents and pathogens present in fresh foods.
