Description
The INNOQUESAR Innovation Project aims to carry out a detailed diagnosis of the entire integral production and distribution chain of the artisanal cheese sector, focusing on the use case of the DOP Cabrales, Gamonedo and those linked to the Association of Artisanal Cheesemakers of Asturias to detect the points of improvement and develop a series of proposals to implement innovative solutions with a scientific and technological basis that allow the Asturian artisanal cheese sector to meet the requirements of the agri-food regulation and the expectations of the market without losing its differentiating character.
