INNOQUESAR Operational Group: Innovation project applied to comprehensive traceability and the value chain of the artisanal cheese sector

The INNOQUESAR Innovation Project aims to carry out a detailed diagnosis of the entire production and distribution chain of the artisanal cheese sector, focusing on the use case of the PDOs Cabrales, Gamonedo and those linked to the Association of Artisan Cheesemakers of Asturias to identify areas for improvement and develop a series of proposals to implement innovative solutions based on science and technology that will allow the Asturian artisanal cheese sector to meet the requirements of agri-food regulations and market expectations without losing its distinctive character.
