To investigate how to valorize vegetable waste from Navarre to create ingredients with nutritional and functional value, reusable in the food chain as sustainable raw materials.
In Navarre, agro-industrial activity generates large quantities of waste and byproducts, reaching 200,000 tons annually in 2019. 51.1% of the waste and byproducts registered in Navarre are of plant origin, with fruit and vegetable processing generating the largest amount (74.4%), followed by the olive oil sector (22.2%). These types of plant residues have valuable nutritional and functional properties due to their protein, fiber, and bioactive compound content, which have health benefits. Therefore, there is both an opportunity and a need for better utilization of these byproducts, allocating a greater proportion to human consumption and finding uses for those that are currently discarded.
