Contextual description
Personalized nutrition involves designing a dietary and nutritional strategy tailored to the specific needs of an individual or group. Certain population groups, such as children, the elderly, and athletes, have specific nutritional requirements. This project aims to formulate personalized foods that meet these needs using plant-based byproducts or alternative nutrient sources. One of the components that can add value to foods is bioactive compounds. These are not nutrients, and therefore not essential for life, but they can have beneficial effects on health.
Results
It has been shown that 3D printing of food with edible inks from by-products allows for personalized nutrition, improved texture, and maintained food stability, offering solutions tailored to specific needs and reducing food waste. A 3D printing device with microwave thermal post-processing that is capable of manufacturing a 3D food product.
