Description

HEZUR EZ GEZUR is a cooperative innovation project for the development of a completely new and sustainable product based on the use of a food by-product (chicken bones) and promoting zero waste. This cooperative project will be carried out by the company DELIKATETXE Kooperatiba Elkarte Txikia, the LEARTIKER technology center and the BASQUE FOOD LABORATORY gastronomic innovation center.

Description of activities
  1. Selection of ingredients and formula design.
  2. Pre-industrial prototyping.
  3. Pre-industrial product validation.
  4. Study of product acceptability.
  5. Communication and dissemination.
Objectives

The main objective of the project is to utilize a byproduct (cooked bones) from the production of chicken broth by the Delikatetxe company to create a new range of products. To this end, a new processing process will be developed to facilitate the incorporation of animal protein into different types of products.
