Description
Development of alternative solutions to probiotic products derived from milk, to obtain lacto-fermented plant-based products with probiotic, prebiotic and/or postbiotic properties, as an alternative for consumers who have intolerance to dairy products, or target population with special nutritional requirements.
Contextual description
Today's consumers are showing a greater demand for foods and beverages that promote well-being and health. In this regard, fermented beverages with probiotics—live microorganisms that provide beneficial effects for the body—are a very attractive option. At the same time, the fermentation process preserves food and improves its nutritional properties and sensory characteristics. In recent years, fruits have generated significant interest in the development of probiotic beverages due to their pleasant taste and popularity among all age groups as healthy and refreshing drinks.
Results
New fermented drinks made from goji, cherry, goji and cherry, and quinoa.
